A warm, yummy, filling breakfast. This recipe Gluten Free and Dairy Free. Adapted from a Taste of Home recipe.
3c gluten free organic oats
1/2c packed organic dark brown sugar
2 tsp baking powder
1 tsp sea salt
½ tsp organic ground cinnamon
1/4c chopped organic nuts (pecans, walnuts) optional
2 organic/pastured eggs, lightly beaten
1c organic dairy-free milk (almond, coconut, hazelnut)
¼ c organic ghee
3/4c chopped, peeled organic tart apple
1/3c chopped fresh or frozen organic peaches
1/3c fresh or frozen organic blueberries
Additional dairy-free milk, optional
In a large bowl, combine oats, sugar, baking powder, salt, cinnamon and nuts. Combine eggs, milk and ghee; add to the dry ingredients. Stir in the apple, peaches and blueberries.
Pour into a lightly oiled 8-inch square baking dish. Bake, uncovered, at 350 degrees for 30-40 minutes or until a knife inserted near the center comes out clean. Cut into squares. Serve with dairy-free milk if desired. Makes 9 servings.
