Oatmeal Pecan Lace Cookies
A Christmas family tradition. These very thin, crispy, lace like cookies are amazing! Eat plain or crumble on a bowl of organic vanilla ice cream.
Ingredients:
2 sticks organic butter
2/3c. organic cane sugar
2/3c. organic dark brown sugar
1 organic/pastured egg
1tsp. organic vanilla
1/2tsp. baking powder
1/2tsp. sea salt
1 1/2c. organic rolled oats
3/4c. chopped organic pecans
1/2c. organic unbleached all-purpose flour
Directions:
In a small mixing bowl add softened sticks of butter & sugars. Mix until light and fluffy. Add egg, vanilla, baking powder, and sea salt. Mix well. Stir in oats, pecans and flour. Drop by teaspoonful, about 3 inches apart on either a well-greased (I use butter) or aluminum foil lined cookie sheet. Bake at 350 degrees for 7 to 9 minutes or until cookies are lightly brown around the edges. Let cookies cool on the pan for 2 to 3 mins before removing; then remove from cookie sheet or peel from foil.
Makes 6 to 7 dozen.
Notes:
After baking your first round of cookies, scrape the cookie sheet to remove extra crumbs then regrease/butter the cookie sheet before adding cookie dough to bake.
Once cookies have cooled for 2 to 3 mins; remove the cookies with a metal spatula. I have found the plastic or nylon spatulas are too thick to remove the thin cookies without breaking them.
Place cookies on cooling rack or parchment paper to completely cool.
