Easy, tasty weeknight supper. Serve over organic short grain brown rice. This recipe is Gluten Free, Dairy Free & Soy Free.
1 1/2lbs grass fed beef stew meat
2 heads organic broccoli (florets chopped thinly)
2 Tbsp avocado oil
Himalayan salt to taste
organic black pepper to taste
organic onion powder to taste
cooked organic short grain brown rice
In a large skillet heat coconut oil over medium high heat. Add in stew meat and brown on all sides until golden brown. Season to taste with salt, pepper & onion powder while stew meat is cooking.
Add in chopped broccoli & stir in with the browned stew meat. Add water and stir to deglaze the pan.
Cover and simmer over low heat until liquid has mostly evaporated and broccoli & beef is tender. Approximately 10-15 minutes.
Serve over cooked organic brown rice. Drizzle coconut aminos over top for added flavor.
Organic yellow squash & organic zucchini in place of broccoli. Slice 1 medium yellow squash and 1 medium zucchini into half moon shapes and cook with browned stew meat until softened.
Organic fresh green beans. Wash and break in half and cook with browned stew meat until tender crisp.
