These really are the best enchiladas according to my husband and son. They love them!
1lb. grass fed ground beef/hamburger
1 small organic onion (optional)
1 pkg. organic flour tortilla or organic corn tortillas
1 pkg. organic shredded cheddar cheese
1 can/pkg organic cream of mushroom soup
1 can/pkg organic enchilada sauce
Additional Toppings (optional):
Organic shredded romaine lettuce
Organic sour cream
Organic diced tomato
Preheat oven to 350 degrees. Chop some onion. Brown hamburger with onion and drain. Add taco seasoning. Mix mushroom soup into hamburger mixture and let simmer for 5-10 mins.
Pour some enchilada sauce in bottom of 9x13 glass baking dish. Dip the tortilla in enchilada sauce and spoon hamburger mixture into shell. Top with some shredded cheese. Roll-up like a burrito and place in pan. After pan is full, pour enchilada sauce over all the enchiladas and sprinkle more shredded cheese on the top.
Put into oven and bake until cheese is all melted and bubbly (about 25 minutes). Remove from oven. Add your favorite toppings like sour cream, tomatoes, lettuce and salsa.
