Quick & easy to throw in a crock pot to be ready for your evening meal or take to a get together. This recipe is Gluten free and Dairy free.
1tsp organic virgin coconut oil or avocado oil
1 pork shoulder roast
1c favorite organic gluten free BBQ sauce
1/2c organic apple cider vinegar
1/2c organic gluten free chicken broth
1/4c organic dark brown sugar
1T organic yellow mustard
1T organic chili powder
1 1/2tsp organic thyme
1T organic gluten free Worcestershire sauce
Pour oil in the bottom of slow cooker. Place roast in the slow cooker. In large bowl mix together BBQ sauce, vinegar, broth. Stir in brown sugar, mustard, Worcestershire sauce, chili powder, onion & thyme. Pour over pork. Cover & cook on high until roast shreds easily with a fork. Approx. 5 to 6 hours.
Remove roast from cooker, shred meat using two forks, return pork to slow cooker and stir into juices.
Serve pork on gluten free bread or on a gluten free tortilla or eat as is.
