German Skillet Dinner

One pot, quick and easy meal handed down through many generations of our family. A few adjustments were made to the original recipe to make it dairy free. Serve with sauteed squash and zucchini.  This recipe is Gluten free, Dairy free and Egg free.

 

Ingredients:

1 1/2T organic olive oil

1 1/2lbs grass fed ground beef

1 small organic onion, chopped

¼ tsp sea salt

¼ tsp organic ground black pepper

3/4c. organic short grain brown rice

1 (15oz or 2-8oz) can organic tomato sauce 

1 (25oz) jar sauerkraut, with juice (Bubbies is my favorite)

1 soup can of water

 

Directions:

In a large skillet, brown ground beef and onions. While beef is browning add salt & pepper to season. Once beef is browned drain off any excess fat.

Sprinkle beef with brown rice. Then layer with ¾ of jar of sauerkraut including juice. Next layer with tomato sauce. Finally add the water. Do not stir.

Cook, covered over low heat for 35-40 mins until rice is done. Once rice is done stir and serve from skillet.

Serves 6
