Easy, one pan hardy meal that is a staple in our family. Serve with sautéed yellow squash and zucchini or sautéed fresh green beans. This recipe is Gluten free, Dairy free & Egg free.
2T avocado oil or lard
3/4c organic short grain brown rice (Lundberg)
1 1/2lbs grass fed ground beef
organic ground black pepper to taste
sea salt to taste
organic onion powder to taste
1 (15oz) can organic diced tomatoes
1 (15oz) can organic stewed tomatoes
½ organic red bell pepper, diced
Approx. 1 1/2c. water
Heat oil in large skillet. Add brown rice to hot oil and stir frequently until golden brown. Be careful not to burn.
Crumble ground beef into rice. Add sea salt, black pepper and onion powder to taste and cook until beef is browned.
Add both cans of tomatoes and diced red pepper to hamburger rice mix. Add water, cover and cook at a low simmer until rice is cooked. Approx. 40 minutes.
