Black Beans & Kale

Spice up your beans and get your greens with this black bean and kale recipe.   It's gluten free and dairy free with a vegan option.

 

Ingredients :

Kale:

1 bunch organic kale, washed, center vein/stem removed & chopped

1/2 c. organic chicken broth or organic vegetable broth

Himalayan salt, to taste

organic black pepper, to taste

 

Black Beans:

1 14.5 oz can organic black beans, undrained

1/2 tsp organic chili powder

1/4 tsp organic ground cumin

1/4 tsp organic onion powder

a pinch organic allspice

Himalayan salt, to taste

 

Directions :

Kale:

In a sauce pan, add broth, kale, salt & pepper to taste.  Cover and simmer on low until kale has wilted and tender.

 

Beans:

In a separate sauce pan, combine all bean ingredients.  Stir and simmer over medium heat. Cook for approximately 10 mins until heated through.

Then use potato, bean or avocado masher to break up the beans a little to thicken. 

Once the kale is cooked and beans are mashed, add kale only (no broth) to the beans and stir to incorporate.

Heat through and serve immediately.
