Chicken Sausage Kale & Sweet Potato Soup

An easy, quick soup sure to warm the tummy!

This was adapted from a Gluten Free Goddess recipe. This recipe is Gluten Free, Dairy Free and Egg Free. 

 

Ingredients : 

1 Tbsp. avocado oil

4 organic gluten free, dairy free Italian chicken sausages

1/4 tsp organic crushed red pepper flakes

1 organic large white sweet potato, peeled and diced

1 organic large orange sweet potato, peeled and diced

1 15 oz can organic fire roasted tomatoes

1 1/2 cartons organic chicken broth

1 bunch organic kale

1/2 tsp organic onion powder

Himalayan salt & organic black pepper to taste

 

Directions : 

Quarter sausages in half then slice into half moon shapes.  In a large soup pot, sauté sausages in avocado oil until browned. Approximately 5 minutes.

Add in sweet potatoes, diced tomatoes, broth, onion powder and red pepper flakes to the pot. Stir, cover and bring to a boil.  Reduce heat and simmer for 15 minutes.

Wash kale & cut out stems.  Chop or tear large leaves into smaller pieces.

When sweet potatoes are fork tender, add in kale, stir and simmer for 10-15 minutes or until kale is wilted and tender.

Season with salt and pepper if needed.
