Creamy Kale

Family favorite kale recipe. What’s not to love…kale & bacon! This recipe is Gluten free, Dairy free, Paleo.

 

Ingredients:

3 slices of nitrate free bacon, chopped (I use Beelers or Applegate bacon)

2 bunches organic kale, washed, stalks removed & chopped

1c. organic beef broth or beef bouillon

1 (13.5oz) can organic coconut milk

Organic black pepper & organic onion powder to taste

 

Directions:

In a large skillet, add bacon and cook over medium heat until bacon crisps and renders fat. Add kale and sauté until it wilts and combines with bacon. Stir in beef broth. Then stir in coconut milk, pepper and onion powder and continue to cook until kale softens another 15-20 minutes.  Serve immediately.

Serves 4
