Our favorite vegetable soup packed with veggies for those cold winter days. This recipe is Gluten free & Dairy free.
1 1/2 lbs grass fed ground beef
1c organic onions, chopped
5c organic beef stock or bouillon
2 (15oz) cans organic diced tomatoes
1c organic carrots, sliced
1c organic celery, chopped
1c organic green beans, chopped
1c organic yellow squashed, chopped
1c organic zucchini, chopped
1c organic cabbage, chopped
1/4c organic short brown rice
¼ tsp organic basil
¼ tsp organic thyme
1 organic bay leaf
In a skillet sauté ground beef and onion until browned. Drain off fat. In a large soup pot add cooked beef and remaining soup ingredients. Bring to a boil, cover and simmer for 1 hour.
