Roasted Brussel Sprouts & Sweet Potatoes

This recipe is Gluten free and Dairy free. 

 

Ingredients:

1 stalk or 12 oz. package of fresh Organic Brussel sprouts

2 medium or 1 large Organic Sweet Potato

Organic Olive oil, Organic Coconut oil or Avocado oil

Sea Salt

Organic Black Pepper

 

Directions:

Preheat oven to 400 degrees. Wash and cut brussels sprouts in half.  Peel and chop sweet potatoes in to 1-inch chunks.  Place sweet potatoes and brussels sprouts on a large greased or nonstick baking sheet and drizzle with oil of your choice.  Sprinkle w/ sea salt and pepper to taste.  Toss together so all veggies are coated with oil.  

Bake for approx. 30-40 mins until tender. Stir occasionally throughout the cooking time.
