Roasted Multi-Color Sweet Potatoes

Tired of the same 'ole roasted orange sweet potatoes? Try mixing it up by adding purple and white sweet potatoes. Each have a different flavor and sure to add more color to your meal.  This recipe is Gluten Free, Dairy Free and Egg Free.  

 

Ingredients : 

1 organic medium to large orange sweet potato

1 organic medium to large purple sweet potato

1 organic medium to large white sweet potato

2 Tbsp liquid coconut oil

Himalayan salt to taste

 

Directions:

Preheat oven to 400 degrees. 

Peel all sweet potatoes and dice in to 1 inch chunks. 

Place sweet potatoes in a large bowl and drizzle with coconut oil & salt. Toss until well coated. Transfer to a large rimmed baking sheet. 

Place in preheated oven and cook for 40 minutes or until golden brown and soft.  Stir a few times while baking to ensure golden brown on all sides.
