Roasted Veggies Medley

There's nothing like roasting vegetables to bring out the flavor. This recipe is Gluten Free & Dairy Free.

 

Ingredients:

1 medium sized Organic sweet potatoes

3 medium sized Organic carrots

1 large Organic yellow squash

1 large Organic zucchini

2 small or 1 large Organic beet

2 TBSP Avocado oil or Coconut oil

Sea Salt & organic black pepper to taste

 

Directions:

Preheat oven to 400 degrees. Wash, peel, and chop sweet potatoes, carrots & beet into 1-inch pieces, chop yellow squash & zucchini into 2-inch chunks.  Place on greased or nonstick large baking sheet and drizzle with oil of your choice.  Sprinkle with salt & pepper.  Toss to coat all pieces.

Bake for 35-40 mins until sweet potatoes, carrots & beets are tender.  Stirring occasionally through out the cooking time.
