Sauteed Kale w/ Pecans
Need a new go-to recipe for Kale? This is it! This recipe is gluten free, dairy free and vegan.
2 bunches organic kale, washed, center vein/stalk removed and chopped
1 handful organic pecans or walnuts, roughly chopped
1 1/2 tbsp avocado oil or organic coconut oil
2 tbsp organic apple cider vinegar
organic black pepper
In a skillet, heat avocado or coconut oil on medium heat. Add chopped kale, be careful of splattering oil. Add salt & pepper to taste. Stir to wilt kale.
When the kale starts to wilt reduce heat to low. Stir in apple cider vinegar then add chopped nuts. Stir until nuts are heated through and kale has wilted and softened. Be careful not to cook kale too long or it will be crispy. Total cooking time approximately 10 mins.
