Gluten Free Oatmeal Pancakes or Waffles

What's not to pancakes & waffles that are GF, DF, EF. Yippee!

This recipe is Gluten free, Dairy free, Egg free.



2c organic gluten free rolled oats 

2c water

1 organic banana

2T organic maple syrup 

¼ tsp sea salt

2 tsp of organic virgin coconut oil

Optional: add chopped organic walnuts or organic pecans to batter 



Place all ingredients, except oil, in a blender and blend until smooth.  Let stand for a few minutes until batter thickens.  If batter is too thick to pour easily, add some water.

For pancakes: Heat oil in frying pan or skillet.  Pour batter approx. ¼ to ½ cup into pan and cook for 2-3 minutes on each side.

For waffles: Pour into a heated waffle iron and cook for 10 minutes.  Makes 2 servings.



Top with organic pure maple syrup or simple fruit syrup by heating your favorite juice (apple, blueberry, peach) to almost boiling and stir in arrowroot to thicken.  

Or top with your favorite almond butter.
